Chocolate fudge brownies (with raspberries) for PMS

PhotobucketEach of my recipes is usually accompanied by my detailed explanations on how and why the text was created ..

This time the reasons are self-explanatory .. without shame, I admit .. PMS .. in those freaking days I need something fulfilling, chocolatey, sweet, moist..

Brownies.

Fudge Brownies.

Hot fudge brownies with raspberries and ice cream made from wild fruit.
Yes, even during these days the word "simple" not in my dictionary. But who would be satisfied with a block of chocolate when you can make this piece of heaven out of it?

Brownies
180g butter
60g chocolate (bitter, or with a large proportion of cocoa)
1/3 cup cocoa powder
1 1/2 cups sugar
3 eggs
2 teaspoons vanilla extract
1 cup flour
  a pinch of salt

Chocolate Fudge
1 tsp sugar
60g chocolate
160ml heavy cream
2 tablespoons butter
1 teaspoon vanilla extract
a pinch of salt

Measures are in cups because the recipe is pretty easy to follow if you are measuring by a cup. The measure of 1 cup is approximately 1.2dcl.

Brownies
  1. To prepare brownies heat up the oven to 180 ° C. Prepare a baking dish of a diameter of approximately 20-25cm (not too wide, because otherwise the cake will be thin and dry). Spread butter and flour or a piece of parchment paper on the bottom of the pan.
  2.  Melt butter and chocolate together over low heat. Move into a mixing bowl and add the cocoa powder mixed and sugar mixture to it. Whisk  well to break the possible clumps.
  3. Check with the finger that the mixture is lukewarm (not hot) and start adding the eggs one by one. Between each addition whisk the egg well with the ingredients. Finally, add vanilla, flour and salt, and also to whisk them in well.
  4. Pour the mixture into the baking dish and bake 25 to max. 30 minutes. Test with a toothpick is not valid for this cake.

Fudge
  1. In a bowl melt chocolate, sugar and cream until the chocolate and sugar is completely dissolved.
  2.  When all ingredients are united, remove from heat and add butter mixture (do not mix, just let it melt).
  3. When the butter has melted, add vanilla and salt.
  4. Pour mixture over the warm brownie dough and leave to cool until the fudge thickens. (If you're impatient like me, half an hour in the freezer would do).
